Lobster Nights at Leola

Lobster season is open in The Bahamas, and Leola is putting it where an Italian kitchen would want it, over pasta made by hand. Every Thursday and Friday from August 27 through October 23, the kitchen serves a Spiny Lobster Fettuccine built for the middle of the table. $199, plus VAT and service charge, with a bottle of wine included.
The lobster arrives whole and split, laid across fettuccine rolled in house, in a sauce with enough heat to keep pace with it. Cherry tomatoes, parsley, and not much else in the way. It is a platter for two and generous for three.
A bottle of white or rosé comes with the platter. Dry and cold, the kind of wine that stays out of the lobster's way.
Chef Scott Conant, a two time James Beard Award winner, has built a career on the idea that Italian cooking is at its best when it gets out of its own way. This is that idea, made with what comes out of the water here.
